Strawberries, like other berries, are famous in the phytonutrient world as a rich surce of phenols. In the strawberry, these phenols are led by the anthocyanins (especially anthocyanin 2) and by the ellagitannins. The anthocyanins in strawberry not only provide its flush red color, they also serve as potent antioxidants that have repeatedly been shown to help protect cell structures in the body and to prevent oxygen damage in all of the body's organ systems. Strawberries' unique phenol content makes them a heart-protective fruit, an anti-cancer fruit, and an anti-inflammatory fruit, all rolled into one. The anti-inflammatory properties of strawberry include the ability of phenols in this fruit to lessen activity of the enzyme cyclo-oxygenase, or COX. Strawberry Phytonutrients that Promote Optimal Health

The ellagitannin content of strawberries has actually been associated with decreased rates of cancer death. In one study, strawberries topped a list of eight foods most linked to lower rates of cancer deaths among a group of over 1,000 elderly people. Those eating the most strawberries were three times less likely to develop cancer compared to those eating few or no strawberries.

A study published in the Journal of Agriculture and Food Chemistry analyzed eight strawberry cultivars for their content of protective plant compounds (phenols, flavonoids and anthocyanins) and their antioxidant capacities. Although the various cultivars differed significantly in the amounts of the various beneficial compounds each contained, all cultivars (Earliglow, Annapolis, Evangeline, Allstar, Sable, Sparkle, Jewel, and Mesabi) were able to significantly inhibit the proliferation of human liver cancer cells. Interestingly, no relationship was found between a cultivar's antioxidant content and its ability to inhibit cancer cell proliferation, which suggests that this beneficial effect of strawberries is caused by other actions of their many beneficial compounds.

Watsonville, CA (July 29, 2009) – Strawberries are good for your brain, according to breaking news out of the 2009 Berry Health Symposium. Several of the latest studies, conducted by world-renowned researchers, consistently showed that strawberry consumption is a simple way to improve cognitive function.

For example, one study presented by researchers from the Chicago Healthy Aging Project (CHAP) showed that older adults who consume strawberries at least once per month have less cognitive decline. More specifically, women who consumed more than one serving of strawberries per month had a 16.2% slower rate of cognitive decline versus those who consumed less.

With increasing age, brain function diminishes. This has been conclusively shown in laboratory studies, by Drs. The LSU AgCenter nutritionist says strawberries are also high in antioxidants such as ellagic acid and anthocyanins, the red pigment in strawberries, which may help prevent heart disease.

According to the American Cancer Society, foods rich in vitamin C, such as strawberries, may lower the risk of cancers of the gastrointestinal tract. Folate may also decrease the risk of some types of cancer.

Ounce for ounce, strawberries have more vitamin C than citrus fruit. One-half cup of strawberries provides more fiber than a slice of whole-wheat bread. One cup of strawberries provides 45 calories, 84 mg vitamin C, 26 mg folate and 3.8 grams fiber.

Louisiana strawberries are usually available from early March through the middle of May. Most Louisiana berries are grown in Livingston and Tangipahoa parishes. Strawberries are grown commercially in several other parishes.

When selecting berries, strawbramberry says to look for a full red color, bright luster and firm, plump flesh. Choose fully ripe berries. Strawberries do not ripen after being picked. The caps should be bright green, fresh looking and fully attached. Avoid berries with large uncolored or seedy areas or those with mold.

Use strawberries as soon after purchase as possible. Take berries home immediately after purchase. Remove the berries from their market or store container. Leave caps on the berries, sort and spread gently in a flat container. Store in the refrigerator immediately.

Just before serving, wash them in gently flowing cold water in a colander. Drain and remove caps.

Strawberries freeze well with or without sugar. Texture, color and flavor are better when sugar is used.

With sugar. Sprinkle sugar over washed whole or sliced berries. Use 1/2 to 3/4 cup sugar to 4 or 5 cups sliced berries. Turn berries gently with a spoon until all are coated with sugar. Let berries set 5-10 minutes to make their own juice. Add one teaspoon of commercial ascorbic acid moisture to the sugar to help protect the color and vitamin C. Pack berries in moisture-vapor-proof bags or containers. Fill containers leaving 1/2 inch of space at top. Place a small piece of crumpled waxed paper or freezer paper on top of berries in rigid containers to hold berries under the juice. Seal and label. Freeze quickly at 0 degrees F.

Without sugar. To freeze whole berries without sugar, place in single layer on a tray or cookie sheet, cover lightly and freeze quickly until firm. Remove from pan, and package airtight in moisture-vapor-proof containers or bags. If they are to be used for preserves or jam, measure and bag before freezing.

One important thing about organically grown foods is that they are a cornucopia of health-promoting chemical compounds. A new landmark study shows that organic strawberry extracts inhibited the proliferation of cancer cells more effectively than conventional strawberry extracts.

What is it about organically grown plants that make them rich in secondary metabolites off the main track, which are great for fighting diseases like cancer? Many of these compounds are actually part and parcel of the plant’s own defence against pests and disease.

Bengt Lundegardh and Anna Martensson at the University of Agricultural Sciences Uppsala Sweden believe that the benefits of organically grown foods have a lot to with activating the plant’s defense mechanisms to synthesize its own protective agents because synthetic pesticides are excluded. An active soil where plants and microbes interact also facilitates the exchange of metabolic compounds such as vitamins and cofactors. In addition, organically grown foods have a richer mineral content, on account of a more balanced nutrient uptake in the absence of artificial fertilizers, which would have provided excesses of easily available nutrients such as nitrates.

Bioactive compounds in foods, especially the plant phenolic antioxidants, are well known to prevent cancer and cardiovascular disease. Phenolics are present in many crops, particularly fruits, and it has become clear that organic foods are richer in cancer fighting antioxidants.

Organic strawberry extracts stop cancer cells

Strawberries have been studied extensively for their cancer fighting ability and that is where the benefits of organic fruit cultivation shine through. Swedish researchers at Swedish University of Agricultural Sciences, Alnarp, and Lund University compared extracts of five organic and conventional cultivars for their ability to inhibit the proliferation of human colon and breast cancer cells. They found that extracts from organically grown strawberries inhibited cell proliferation more effectively than extracts from the conventionally grown ones, and in both types of cancer cells.

The strawberry extracts decreased cell proliferation in a dose-dependent manner between 0.025 to 0.5 percent dry weight of extract to volume of cell culture. At the highest concentration, the organic extracts inhibited proliferation of colon cancer (HT29) cells by 60 percent and breast cancer (MCF-7) cells by 53.1 percent; the corresponding values for conventional strawberry extracts were 49.7 percent and 37.9 percent respectively. The differences between conventional and organic were statistically highly significant.

The most effective extracts at inhibiting cell proliferation contained 48 percent more ascorbate and 5 times more dehydroascorbate. (Vitamin C is ascorbate plus dehydroascorbate.) The organic strawberries also had more antioxidants and a higher ratio of ascorbate to dehydroascorbate.

Compost as a soil supplement increased the level of antioxidant compounds in strawberries. The strawberry extracts, rich in vitamin C and antioxidants, were found to interfere with the mitogen-activated protein kinase (MAPK) signaling cascade that leads to cell division, and to suppress cancer cell proliferation and transformation.

These latest findings on organic strawberries are in line with those on other organic fruits. Organic yellow plums were found to be richer in phenolic acids when grown in natural meadow or with a ground cover of clover than conventionally grown plums. Plum and clover extracts induced apoptosis (cell death) and reduced the viability of human liver cancer cells.

2 skinless, boneless chicken breast halves - cut into thin strips

3 tablespoons frozen limeade concentrate, thawed

1/4 teaspoon black pepper

1/3 cup white sugar

1/2 cup white vinegar

1 teaspoon salt

1 teaspoon ground dry mustard

1 teaspoon dried minced onion

1 cup vegetable oil

1 tablespoon poppy seeds

1 pound baby spinach leaves

2 cups sliced fresh strawberries

1 cup sugar snap peas, ends and strings removed

1/2 cup pecan halves

DIRECTIONS

Toss chicken breasts, limeade, and pepper in a bowl. Cook the chicken breasts in a skillet until no longer pink in the center and the juices run clear, about 8 minutes. Remove skillet from the heat and set aside.

Combine sugar, vinegar, salt, mustard, and onion in a blender. Process for about 20 seconds. With the blender on high speed, gradually add oil in a slow and steady stream. Stir in poppy seeds.

Arrange spinach on 4 salad plates and top with strawberries, peas, pecans, and the cooked chicken. Serve with the poppy seed dressing.

1) Easy strawberry ice cream

To make an ice cream that doesn't need churning, you need either lots of egg yolks or high milk solids. This year I offer a thrifty and crowd-pleasing condensed milk (concerted milk solids) alternative. Using fewer strawberries gives a paler, creamier ice that still has a good, subtle flavors, while more strawberries equals a bigger strawberry hit.


Ingredients :

1) 110-225 grams strawberries

2) Half a lemon or lime

3) 300ml double cream

4) 397grams tin condensed milk


Process :

1. Purée the strawberries in a food processor or blender. Rub them through the sieve if you prefer to get rid of the seeds.

2. Squeeze in a few drops of lemon juice.

3. Put the cream and condensed milk in a large bowl and beat with an electric whisk until they are thick and billowing.

4. Fold the strawberry purée and cream mixture together. Taste and add a little more lemon juice if it seems to need it.

5. Scrape into a plastic box, cover and freeze.

2) Fresh strawberry ice cream

Makes about 5 cups

Don't let the unexciting name of the recipe fool you—this ice cream is unusually good.

Ingredients :

  1. 1 3/4 cups heavy cream
  2. 3 (3- by 1-inch) strips fresh lemon zest
  3. 1/8 teaspoon salt
  4. 2 large eggs
  5. 3/4 cup sugar
  6. 1 lb strawberries (3 cups), trimmed and quartered
  7. 1 tablespoon fresh lemon juice

Note : a special equipment: an ice-cream maker and an instant-read thermometer

Preparation

Combine cream, zest, and salt in a heavy saucepan and bring just to a boil. Remove from heat and discard zest.

Whisk eggs with 1/2 cup sugar in a bowl, then add hot cream in a slow stream, whisking. Pour back into saucepan and cook over moderately low heat, stirring constantly, until slightly thickened and an instant-read thermometer registers 170°F (do not let boil).

Immediately pour custard through a fine sieve into a metal bowl, then cool to room temperature, stirring occasionally. Chill, overed, at least until cold, about 2 hours, and up to 1 day.

While custard is chilling, purée strawberries with remaining 1/4 cup sugar and lemon juice in a blender until smooth, then force through fine sieve (to remove seeds) into chilled custard. Stir purée into custard.

Freeze in ice-cream maker, then transfer to an airtight container and put in freezer to harden.

Cooks' notes:• To cool custard quickly after straining, set bowl in a larger bowl of ice and cold water and stir until chilled. • Ice cream keeps 1 week.
